Before I get into today’s post, I just wanted to say an extra THANK YOU to everyone who wrote, commented, liked, emailed, texted, called, sent a virtual hug, etc. after seeing Monday’s post with our BIG NEWS! I was overwhelmed with how much love I felt from everyone and it even made things a little more real for me… I can’t wait to share more with you throughout the next few months and appreciate your support more than you know! Now that I’m pregnant it is more important to me than ever to make sure I am incorporating healthy meal and snack options into my day (but let’s be real, I don’t think it’s possible for me to be healthy allll the time but I can try). This DIY acai bowl recipe has been a game-changer for me and this is why…
Have you ever had an acai bowl? If you haven’t tried one, maybe you’ve seen a picture of one while scrolling through Instagram? It’s that purple, smoothie-looking thing in a cup with fresh fruit and granola on top and it’s actually really tasty and really nutritious.
I love grabbing an acai bowl while I’m out and about and need a snack but for those of you who have had them, you know they’re not cheap. While I understand the nutritious ingredients that go into making an acai bowl are probably worth the $10 price tag, buying this snack on the regular can add up.
After discovering frozen packets of acai puree while shopping at Trader Joe’s the other day (I mean I’m not surprised. They do have the best frozen food section ever – although I’m still upset with them for discontinuing those arancini balls…), I decided to grab a couple of boxes to attempt making this healthy snack myself. Now more than ever it is important to me to have healthy snacks like this in my diet. The result turned out pretty darn good and it is safe to say I will be making this acai bowl recipe on a regular basis! Scroll down for this DIY acai bowl recipe…
DIY ACAI BOWL RECIPE
1 packet acai puree (mine is from Trader Joe’s)
1 cup frozen fruit of your choice (I used strawberries and blueberries)
½ banana
1 cup almond or coconut milk (you can also use juice but I found it to be too sweet)
Topping:
Handful of granola
1 teaspoon chia seeds
1 teaspoon
Other ½ of banana
Sliced strawberries and pineapple (or fruit of choice!)
Drizzle of honey
Add first four ingredients into the blender and blend until smooth but still thick. Pour into bowl of choice (how cute is this pineapple dish from Target?!) and add toppings. Serve immediately.
Keep in mind you can use whatever fruit and toppings you want! I’ve also added toasted coconut shavings which is really tasty too! If you’ve made an acai bowl before I’d love to know what you use to make yours! By the way how fitting is this South Parade “Let’s Get Tropical” tank?? I thought it was so cute and you can get it here. The ceramic pineapple dish I served the acai bowl in is from the dollar section at Target! That section gets me EVERY. SINGLE. TIME… the pineapple was only $5 which I feel like is a steal for how nice it is. Things like this cost $50-$100 in a department or home store!! I couldn’t find it online but will update this post if I do!
Hope you enjoy this recipe! Thanks for reading!
