Hallelujah! It’s Friday! And not just any Friday… the Friday before Christmas! I know the next few days are going to fly by and I will be enjoying a Cuban feast and opening presents with my family in no time. This time of year gets pretty hectic as far as trying to get those last minute gifts purchased (I’m STILL shopping) and trying to get as much work done as possible (if you are lucky enough to get to take some time off). What this all usually means is that you won’t have time to cook dinner and will most likely need a drink… that’s why I’m sharing this happy hour spot with you. Resto Gastro Bistro is another Trinity Groves hot spot (remember my love for Chino Chinatown and Casa Rubia?) and they feature a Modern American cuisine with global influences.
Like most of the other Trinity Groves spots, Resto Gastro Bistro is unique with both its decor and menu. Case in point: the Lobster Corn Dogs. These are not your ordinary fast-food corn dogs. Chef DJ Quintanilla (you may have seen him on Food Network’s Cutthroat Kitchen) deep fries battered lobster with a lemon marmalade and whole grain mustard. They are fried to the most beautiful golden brown and served alongside a bed of french fries. We also tried the Pork Belly with Figs which was a beautiful presentation featuring roasted cherries, pistachios, figs, and a sherry gastrique. The combination of flavors was outstanding.
My favorite part of Resto Gastro Bistro was their libations… Monday-Friday from 5-7pm they offer a few select cocktails for only $6 (basically half price). My brother had the Shishito Margarita and I ordered the Trinity 75. The Shishito Margarita is a shishito pepper infused Cazadores Blanco, Lychee Cordial, agave, and lime. I love shishito peppers so I really enjoyed this one.
The Trinity 75 is made with Nue Vodka, blackberry, ginger, basil, and champagne. As you can tell it is a clearly gorgeous cocktail and it tastes as good as it looks. I love champagne cocktails and imagine there are quite a few other women in Dallas who will definitely be ordering this one!
Whether you belly up to their beautiful bar, sit at a table under one of the rock legends (David, Mick, Jimi, or Jim), or park it on the open patio facing the stunning Margaret Hunt Hill Bridge, Resto Gastro Bistro is a wonderful spot to kick back with a $3 beer, $5 well, or $6 craft cocktail with friends for happy hour.
