Boho Rainbow Cookies Recipe + My Walmart+ Membership!

We had a small birthday party to celebrate Mila turning 3 last weekend and she had the best time! Despite just having a baby and experiencing a few complications postpartum, I knew I still wanted to do a little something for my girl to make her feel extra special! As a lot of you know, Mila LOVES rainbows so I had an idea to make ginger snaps and paint little white rainbows on them with icing! I, of course, didn’t have any of the ingredients I needed the day before the party but thankfully was able to have Walmart deliver everything I needed.

I’ve used my Walmart+ membership a couple of times now since signing up and I can already tell it will be so worth it! Being able to shop their everyday low prices and, in some cases, be able to receive them the same day is amazing. This membership has been so helpful already since I’ve stayed home with our newborn Dylan. Anything that saves me time and allows me to spend more time with my babies is definitely a must in my eyes! 🙂

I forgot to mention we were also able to order Mila a soccer goal, just in time for her party, to surprise her with! So whether you’re doing grocery shopping or may need a last-minute gift like we did, you can shop it all here. I also love their Secret Treasures pajamas and just saw they got all of these matching sets in. I have a pair from last year and they are the softest material!! I definitely recommend grabbing a pair or a few to give as gifts (they run a little big)!

But now for the boho rainbow cookie recipe! I modified this recipe my Aunt Julia sent me to make the ginger snaps then used cookie icing for the rainbows. You could obviously make these colorful but I loved the simple brown and white to really give it that boho feel. Here is the recipe!

Boho Rainbow Ginger Snap Cookies

These ginger snap cookies are delicious on their own but add a little icing for some extra sweetness and cute design! Thank you to my Aunt Julia for this ginger snap recipe!

Ingredients
  

  • 2/3 cup unsalted butter softened
  • 1 cup brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 cups flour
  • 3 tsp ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tsp baking soda

Instructions
 

  • Combine butter, brown sugar, egg and molasses in mixer and beat until creamy. In separate mixing bowl combine flour, ginger, ground cinnamon, salt and baking soda. Add dry ingredients to creamed mixture and mix until blended. Roll dough into balls and then roll in a bowl of white sugar. Place on ungreased cookie sheet and bake at 350 for 12-14 minutes. Cook time will depend on how big cookies are and how crisp you want them. I prefer cooking a shorter amount of time!
