Boho Rainbow Ginger Snap Cookies
These ginger snap cookies are delicious on their own but add a little icing for some extra sweetness and cute design! Thank you to my Aunt Julia for this ginger snap recipe!
- 2/3 cup unsalted butter softened
- 1 cup brown sugar
- 1 egg
- 1/4 cup molasses
- 2 cups flour
- 3 tsp ginger
- 2 tsp ground cinnamon
- 1/2 tsp salt
- 2 tsp baking soda
Combine butter, brown sugar, egg and molasses in mixer and beat until creamy. In separate mixing bowl combine flour, ginger, ground cinnamon, salt and baking soda. Add dry ingredients to creamed mixture and mix until blended. Roll dough into balls and then roll in a bowl of white sugar. Place on ungreased cookie sheet and bake at 350 for 12-14 minutes. Cook time will depend on how big cookies are and how crisp you want them. I prefer cooking a shorter amount of time!
