Challah French Toast Casserole

This challah french toast casserole is perfect for Easter brunch at home or anytime you're craving a sweet breakfast!

Ingredients
  

CASSEROLE

  • 1 loaf Challah Bread (preferably a day or two old) *could also use french bread or brioche but challah is delicious!
  • 8 eggs
  • 1.5 cups milk
  • 1 cup heavy cream half and half would be fine too
  • 1/2 cup sugar
  • 2 tsps vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt *I did a pinch

TOPPING

  • 1/2 cup brown sugar
  • 4 Tbsps cold butter
  • 1 tsp ground cinnamon

Instructions
 

  • Butter a 9x13 casserole dish (or large casserole dish) and tear or cut bread into cubed pieces.
  • In a bowl mix together eggs, milk, heavy cream, sugar, vanilla extract, ground cinnamon and salt. Pour mixture evenly onto bread making sure all pieces are covered. Cover with plastic and place in refrigerator overnight.
  • For topping: in small bowl mix brown sugar with cinnamon. Cut butter into small cubes and add to topping.
  • Take casserole out of refrigerator when ready to bake and sprinkle topping evenly on top.
  • Bake at 350 degrees F for 45 minutes. It may need longer but I always like to check and add time if needed as opposed to overcooking!
  • Serve warm with your favorite maple syrup poured on top!
